Awesome Healthy Meatloaf

2 c soft bread crumbs (tear up soft sliced bread -- don't use fine crumbs)
2 lbs ground beef
2 eggs, beaten
1 large onion, chopped fine
1/2 t dry mustard
1/2 t ground sage
1/2 t ground thyme
2 t salt
1/2 t pepper
1/4 t nutmeg
1 finely chopped green pepper
1 c ketchup, divided
1 c grated celery
1 c grated carrot
  1. Mix meat with egg, add seasonings, vegetables, and bread crumbs.
  2. Add half the ketchup and mix everything well.
  3. Turn into greased loaf pan or glass casserole dish and pour remaining ketchup over the top, smoothing it evenly over all.
  4. Bake 350 F  for 1 1/4 hours or to an internal temperature of 160.
  5. Remove from oven and let stand for 15 minutes.
  6. Slice, arrange on a platter and garnish.
  7. Serve with a pan gravy made from the pan drippings using a deglazing technique.
